Here, I'm sharing an interesting story. Today is my birthday, and we went to NOP for a meal. Yes, as I've mentioned before, I make exceptions on my raw food journey to celebrate and dine out.

Then today, a peculiar thing happened. I received a call to wish me happy birthday while we were ordering food, and Mirjam ordered for me. Accidentally, a Caesar salad with shrimp was chosen.

Mirjam was in a panic about ordering the wrong food for me. I shrugged it off and enjoyed seafood after a long time.

Life is interesting and funny. Here's one of my favorite cake recipes:

MATCHA CAKE (SORRY FOR THE LACK OF PICTURE, BUT BELIEVE ME, IT WAS A VERY TASTY CAKE)

INGREDIENTS:

BOTTOM LAYER:

Overnight soaked cashews Coconut oil Date paste Maca powder A bit of lemon juice Pinch of salt

TOP LAYER:

Avocado Date paste Coconut oil Cinnamon Matcha green tea Apples for decoration

INSTRUCTIONS:

Blend cashews, dates, Maca, lemon juice, and a pinch of salt into a thick paste using a blender or food processor.

Place it in your preferred mold as the bottom layer. In a bowl, mix Matcha powder, avocado, date paste, and cinnamon. Add water if needed. Cover the bottom layer with this mixture. Decorate your cake with apple slices and refrigerate for a couple of hours.
